Product Instructions:
Sharpening Instructions: Always apply a few drops of Smith's premium Honing Solution to your stone before you start sharpening. The lubricant helps to float away metal and stone particles that develop during the sharpening process.
- Assembly: Mount the T-bars tightly onto the end of the knife clamp, then screw a guide rod into the end of each stone bar.
- Position of Blade: Attach the knife blade by loosening the front screw and red thumb screw of the knife clamp to accommodate the blade's thickness. Attach the clamp to the back of the blade at its midpoint. Seat the blade in the vise so at least 1/4 inch of the blade's cutting edge extends out beyond the end of the vise unit. Tighten the front screw to hold the knife in place, then tighten the large thumb screw on the knife clamp to lock it. Do not overtighten either screw. Caution: Do not attempt to sharpen your knife if it is loose in the clamp.
- Angle Selection: After securely fastening your knife into the knife clamp, place the guide rod with the attached stone bar through one of the slots in the T-bar. The two most commonly used sharpening angles include: The lower slot sharpens at a 20-degree angle, commonly used for quality blades to provide an excellent edge, ideal for kitchen knives. The upper slot sharpens at a 25-degree angle, providing a durable, sharp edge for most knives, excellent for hunting and all outdoor knives.
- Sharpen Your Knife: Hold the knife clamp in your hand with the guide rod in the desired angle slot. Holding onto the plastic handle of the stone bar, place the stone you intend to use on the knife blade near the handle. With smooth, even motions, push the stone across the cutting edge, working your way from the handle to the point of the blade. To sharpen the other side of your cutting edge, remove the guide rod from the slot, turn the knife and clamp over, place the guide rod in the same slot on the T-bar you used previously, and repeat the sharpening process. Use the same number of strokes on each side and sharpen both sides before moving to the next stone.
- Sharpening Serrated Edges: To sharpen serrated edges, use the blue stone bar with the specially shaped triangular stone and repeat step four for each serration on the serrated side of the knife only. Once the sharpening process is complete, remove any small burrs created on the backside of your edge by removing your knife from the clamp and lightly running the Fine Arkansas stone over the backside of the cutting edge.
Care: To clean a clogged stone, simply wipe it with a rag or rinse under warm running water.
